Brittany’s Budget Diary: Organic and budget can exist in the same sentence

My most popular Facebook and Instagram posts are pictures of my all-natural, usually organic meals. So many followers have told me they wish they could afford to eat organically, and I’m here to tell you that you can.

Organic eating on a budget is all about planning. I know what I’m eating every morning, afternoon and evening. This is to avoid wastefulness and to buy things that can cross over into multiple recipes.

Right now, here are my favorite organic recipes that you can make on the cheap!

Guacamole Lettuce Wraps

You need one small container of organic pre-made guacamole (I buy mine from Whole Foods), organic romaine lettuce leaves, and jalapeño Tabasco sauce (not organic, but it’s vegan and I cannot spare it). Just scoop the guac into the lettuce leaves and top with the jalapeño sauce. If you need meat, add in baked, vegetarian-fed, cage-free chicken breast. Right now, this is my favorite dinner.

Strawberry and Cream Cheese Sandwich

You need cream cheese from a grass-fed cow (it will say organic), organic strawberries and organic bread. Toast the bread, spread cream cheese on both sides and slice approximately three strawberries and spread across bread slices. Put the two pieces of bread together and you have a delicious breakfast sandwich.

Cheese and Black Bean Quesadillas

You need organic tortillas, shredded cheese (your choice) from a grass-fed cow, and organic black beans in a can. Place the tortilla on a cast-iron skillet over medium heat. After one side is heated, flip. Fill tortilla with a handful of cheese and a spoonful of beans. If you need meat, add in baked, vegetarian-fed, cage-free chicken breast. Fold tortilla and remove when cheese is melted. Use a pizza cutter to slice quesadilla into triangles. I like to dip my quesadillas in organic sour cream and salsa.

Fancy Toast ‘n’ Eggs

This is what I think is my own creation, but is so simple, that it has probably been done a million times before me. You need organic bread and butter, cage-free eggs, shredded cheese (your choice) from a grass-fed cow, and jalapeño Tabasco sauce. Place butter in one small pan, add bread and toast on both sides. In another pan, cook an egg over medium (runny yolk). Once egg is done and bread is nearly toasted, take egg and place it on top of bread while bread is still cooking. Top egg with cheese. To “flash fry” the cheese (as I call it), flip the entire thing (cheese down) and immediately flip onto your plate. Top with jalapeño sauce. Maybe eat with some of that guacamole from before if you have any leftover.

Hungry, aren’t you? These meals are simple, delicious and cheap. In fact, I still spend the exact budget on groceries as I did when I wasn’t eating organically. It just takes planning, planning and some more planning.

Tip: Wash this down with Zevia cola or ginger root beer. Made with the miracle of stevia (all natural sweetener), these sodas are vegan, kosher and gluten free.
