Southern Cravin's is located at the corner of U.S. Highway 41 and Wesson Street in White Springs.

WHITE SPRINGS — After years of discussing the idea, Cathy Fender and her son Jimmy Fender Jr. finally opened their food trailer business last month.

Southern Cravin’s opened in October, finally coming to fruition after South Hamilton Elementary School, where Cathy Fender worked, closed this past spring.

She briefly began work at the new Hamilton County Elementary School but decided after a month to instead finally launch the new business.

Business has proven it was a good decision as the trailer, which is located on the corner of U.S. Highway 41 and Wesson Street, has stayed busy. It is open Tuesday through Saturday from 11 a.m. to 8 p.m. Southern Cravin’s call-in order number is 386-984-7935.

“We have at least a hundred people order from us every day,” Cathy said. “Every time we talk about maybe going somewhere else we have a line of people come to get lunch.”

Those customers are getting food is cooked to order using fresh ingredients.

“We use whole chicken breasts and then cut them to make our chicken tenders,” Cathy Fender said.

Southern Cravin’s has started doing deliveries and catering for PCS once a week since they opened.

“We had a 52 order just this morning for PCS,” Cathy said. “They called before we opened and asked for the orders.”

The menu consists of a variety of sandwiches, subs, hot dogs, hamburgers, po’ boys, chicken strips, a Philly cheesesteak along with specials each day.

“We use fresh ribeye for the Philly cheesesteaks and it is one of the best,” Jimmy said. “We are planing to, in the future, have BBQ nights on Friday and Saturday as well as seafood broils at some point.”
